STEPH CLAIRE SMITH: '3 family-friendly dinner recipes on high rotation in my house.'

These quick, easy and delicious recipes are on high rotation in Steph’s household, particularly as a busy business owner and mum to Harvey. 

The One Pot Lasagna has become a staple weeknight dinner, while the Open Burger Bowl has been almost a daily go-to of late (if you have been tuning into Steph’s Insta Stories you'd know).

The BLT Pasta Salad is the perfect meal prep-friendly dish, and all three Kic recipes Harvey loves. Here's what Steph Claire Smith is making for family dinners mid-week.

1. One Pot Lasagna.

Who knew lasagna could be prepared so effortlessly over the stove? We know this one is going to become a family favourite.

Ingredients:

  • 2 garlic cloves
  • 1 onion
  • 200g zucchini
  • 1 spray extra virgin olive oil
  • 1 tbsp tomato puree
  • 500g extra lean beef mince
  • 500g marinara sauce
  • 2.5 cups low-sodium beef stock
  • ½ tsp salt
  • ½ tsp cracked pepper
  • 150g lasagne sheets
  • 100g mozzarella

Method:

1. Mince the garlic, finely chop the onion and dice the zucchini. Heat olive oil in a deep saucepan or skillet over medium heat. Add the onion and garlic, then sauté for 5 minutes, until softened. Add the tomato puree and cook for another two times, until darkened in colour.

2. Add the beef mince and diced zucchini; cook until browned, approximately 5 minutes. Add the marinara sauce, stock, salt and pepper. Bring to a boil and cook at medium heat for 10 minutes, stirring occasionally.

3. Tear the lasagne sheets in half and add to the saucepan; continue cooking over medium heat for another 15 minutes, or until the pasta is cooked. Slice the mozzarella and place over the lasagna; then cook for another 2-3 minutes, or until melted.

2. Open Burger Bowl.

Level up your meal prep game with our Open Burger Bowl, a tasty, flavoursome and wholesome dish that's perfect for lunch or dinner.

Ingredients:

  • 1 x small sweet potato
  • Extra virgin olive oil spray
  • 1 tsp salt, divided
  • 225g extra lean beef mince
  • 1/2 tsp onion powder, divided
  • 1/2 tsp paprika, divided
  •  1/4 tsp garlic powder
  • 1/4 tsp cracked pepper
  • 1/2 tsp dried oregano
  • 1/2 x red onion
  • 1 x cos lettuce
  • 200g cherry tomatoes
  • 30g mayo
  • 10g ketchup
  • 5g dijon mustard
  • 10ml pickle juice
  • 75g burger pickles
  • 5g fresh dill

Method:

1. Preheat oven to 200°C and slice sweet potatoes into long strips. Place on a lined baking tray and spray with extra virgin olive oil spray. Season with 1/2 tsp of salt and roast for 15-25 minutes, or until golden.

2. Heat olive oil in a pan over medium-high heat. Add mince, 1/4 tsp onion powder, 1/4 tsp paprika, garlic powder, dried oregano, pepper and remaining 1/2 tsp of salt. Cook, stirring regularly, for 8-10 minutes, or until fully cooked.

3. Meanwhile, quarter cherry tomatoes, slice onion into thin rounds and roughly chop cos lettuce.

4. In a clean bowl, add the remaining 1/4 tsp onion powder, 1/4 tsp paprika, mayonnaise, ketchup, mustard and pickle juice. Mix to combine.

5. Divide the mince between two bowls, then add the roasted sweet potatoes, cos lettuce, cherry tomatoes, onion and pickles. Drizzle over the sauce and garnish with dill.

3. BLT Pasta Salad.

The perfect pasta for any bacon lover.

Ingredients:

  • 200 grams KIC chickpea pasta
  • 1 tbsp extra virgin olive oil
  • 1 garlic clove
  • 2 tsp lemon juice
  • 1/2 tsp dijon mustard
  • 1/4 tsp chilli flakes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 200g cherry tomatoes
  • 50g shortcut rindless bacon
  • Olive oil spray
  • 50g baby spinach
  • 50g mini bocconcini
  • 15g fresh basil leaves
  • 15g pine nuts

Method:

1. Bring a pot of salted water to boil and cook pasta as per packet instructions. Mince garlic and place in a small bowl with olive oil, lemon juice, Dijon mustard, chilli flakes, salt and pepper. Whisk to combine.

2. Halve cherry tomatoes and put aside, then slice bacon into small bite-sized pieces. Place a non-stick pan over medium heat, spray with olive oil and fry bacon until crispy.

3. Place the cooked pasta, bacon, cherry tomatoes, baby spinach, mini bocconcini, basil leaves and pine nuts in a large bowl.
