4 of the best Bali-inspired mocktails to make at home.

Does it feel like every second person on your Instagram feed is poolside in Bali/Fiji/Hawaii while you’re stuck at home – heater-side – trying to warm your soul?

That is my life right now.

So, here to help make the winter days roll on until I have an actual beach holiday is Sara Agah Franti, CEO of Soulshine Bali. Unlike other health and wellness resorts, Soulshine Bali has a rock'n'roll vibe (influenced by co-founder, musician Michael Franti), which means you can start the day with yoga or a HIIT session and end it dancing with a cocktail in hand at their outdoor music venue. 

Yes, a cocktail! With alcohol! At a wellness resort! Sounds like my kind of holiday.

And my thinking is, if they do actual cocktails, they probably do some pretty good non-alcoholic, kinda healthy versions for those of us who are doing Dry July or just want to limit our intake of booze.

My theory seems on track. As Sara confirms: “I was adamant that our mocktails would be as good as, if not better than, the cocktails we offer at Soulshine."

You know what? Since I don't have a plane to catch this weekend (sigh), I'm going to do a taste test at home. Keen to join me? Sara shares Soulshine's top mocktails below.

1. Cucumber Ginger Cooler.

“This is the ultimate refresher. The ginger gives it a bit of kick, while the cucumber and lemon and honey balance it out without being too sweet,” Sara says. “I’ll often forgo an alcoholic drink for this one at the end of the night. And bonus points: it’s also an immunity booster.”

Ingredients: 

  • 100g cucumber                               
  • 10g fresh ginger
  • 30ml lemon juice
  • 30ml honey
  • 2 ice cubes

Method: 

1. Juice cucumber in a slow juicer. 

2. Muddle ginger in the mixing glass, then add cucumber juice. 

3. Add lemon, honey and ice cubes. Shake all together. 

4. Strain all together and serve in the rock glass with ice and garnish with cucumber slice and flower.

2. Jalapeno Margarita.

“Sometimes you want to feel the heat,” Sara says. “This one definitely fits the bill of a grown-up drink – it’s refreshing with a spicy edge. I choose this one to get me in the mood for the dancefloor at our outdoor music venue, the Togetherness lounge.”

Ingredients:

  • Salt
  • 3 pieces of fresh Jalapeno                       
  • 25ml lime juice
  • 15ml simple syrup                           
  • 60ml orange juice
  • 1 scoop ice cubes

Method: 

1. Rim glass with salt. 

2. Muddle fresh jalapeno in the mixing glass. 

3. Add lime juice, simple syrup, orange juice and ice. 

4. Shake all together and pour and strain into the glass. 

5. Garnish with orange and flower.

3. Sparkling pineapple spritz.

“This fun all-day drink will take you back to a favourite tropical vacation,” says Sara. “The taste and vibrant yellow colour instantly puts a smile on my face and transports me to the tropics. Clean and refreshing, it’s a good one to sip poolside at Soulshine’s day club.”

Ingredients: 

  • 200g fresh pineapple                      
  • 20ml lime juice
  • 1 scoop ice cubes
  • Soda
  • 1 slice pineapple (to garnish)

Method:

1. Juice the pineapple in the slow juicer. 

2. Pour into the glass, add lime juice and ice.

3. Top with soda and garnish with 1 slice of pineapple.

4. Butterfly Spritz.

“Butterfly pea flower is currently trending all over the world for its pretty shade of purple and blue tea,” Sara says. “Drinking butterfly tea is thought to have a stress-busting effect, refresh the brain, bolster energy levels and stamina, and influence positive emotions. Combined with lime and honey, it's the perfect elixir to sip while watching the stunning sunset over the terraced rice fields at Soulshine in Ubud.”

Ingredients: 

  • 5 pieces butterfly pea flower         
  • 150ml hot water       
  • 3 pieces kaffir leaf
  • 30ml lime juice                               
  • 30ml honey                                      
  • 1 scoop ice cubes
  • Soda 

Method: 

1. Brew the butterfly pea flower in a cup with the hot water. 

2. Muddle kaffir leaf in the mixing glass, add butterfly tea, lime juice and honey. 

3. Shake all together and strain. 

4. Serve in the highball glass with ice, top with soda water and garnish with lime ring, kaffir leaf and butterfly pea flower.
