I know my comment is a bit late, but this is all so very true. I worked as a server for several years, and most people fell somewhere between neutral and nice. It wasn’t until years later out with a couple friends that I was reminded of your sentiment. My friends invited me out for sushi as a farewell before I moved away and eventually lost contact with them. Everything was nice until my one friend had a glass of water spilled in her lap by the server. Now, the friend with the wet lap took it in stride and was gracious. May have had something to do with being a server herself at the time, but my other friend huffed and puffed and donned this air of disgust with our server, who of course apologized. It was shocking to me, even more so because the indignant friend wasn’t the one with the soggy lap! It was a side of my friend I hadn’t seen before and I didn’t like it. At the risk of being being too hard on the irritated friend, I have never forgotten that episode. We all worked in retail at the time ourselves where such behavior from others is unfortunately not uncommon so whatever gave her the impression she could be rude to someone else when the proverbial tables were turned struck me as a warning sign.
