Another week, another five nights of meals to prepare …
I’m exhausted from baking dalek cupcakes for my eldest daughter’s Doctor Who birthday party, but there’s no rest with four hungry mouths to feed. So I’ll be ducking to the supermarket and stocking up on the ingredients for these five family friendly dinners.
Here’s what I have in mind …
Monday: Grilled chicken kebabs with maple mustard dipping sauce
This recipe for chicken kebabs is surprisingly simple. If you prefer a more savoury dipping sauce to a sweeter one, swap in 1 teaspoon wasabi powder for the maple syrup. Using bamboo skewers makes the grilling easy, but you can also cook the chicken without skewers and serve with toothpicks on the side for easy pick up.
Tuesday: Boeuf Bourguignon
Hearty and comforting, I’ll prepare this dish in a slow-cooker the day before (casseroles always taste yummier the next day) then serve it with mash.
Wednesday: Personal pepperoni pizzas
My husband is home with the kids on Wednesdays and they love making pizza dough together. Instead of topping your pizza with high-fat, greasy pepperoni slices, in this version you finely chop just a small amount of pepperoni and cook it into your homemade tomato sauce. You’ll get the flavour without the fat; plus, the little bits will get distributed evenly across your pizza. If you’re not in the mood to knead your own dough, a pre-made base would work just as well.
Thursday: Parmesan and sage crusted pork
My husband refuses to eat pork but he’s away on a business trip so the rest of the family will gobble up this treat.
Friday: Chicken quesadilla pinwheels
I’ll serve these alongside a salad for a fun Friday night dinner.
