5 dinners to get you through the end of the school holidays.

School holiday are drawing to a close in our household and my pockets are empty after two weeks of childcare, so I have a week of budget dinners planned. Lots of pasta, canned fish and cheaper cuts of meat will keep costs down. But that doesn’t mean flavour will be sacrificed.

Here’s what I have planned …

Monday: Macaroni & cheese (with hidden veggies)

 

This recipe comes from Deceptively Delicious by Jessica Seinfeld. She’s comedian Jerry Seinfeld’s wife and specialises in sneaky recipes that contain vegetable purees. This one has half a cup of carrot puree in it.

Tuesday: Salmon rosti

 

This recipe mixes hash browns with canned salmon for a succulent dinner treat. It calls for frozen shredded potatoes, which I don’t think are available in Oz, so I’ll be grating my own.

Wednesday: Grilled chicken fingers with Manchurian sauce

 

My husband takes care of the barbecuing at our place (I know, I know) and Wednesday is his day off, so he’ll grill these tasty babies.

Thursday: Beef tostadas

 

I’ll put the beef in the slow cooker before heading to work. Substitutes for fussy kids include ditching the chilli, using grated cheese instead of feta and skipping the coriander.

The trick to getting them really crunchy and yum is to squeeze out the excess moisture from the grated potato. This really isn't as big a hassle as it sound you just bung it into a colander and press. I am slightly dubious as to weather the tinned fish would work (it defies the logic of draining the spuds) but I can recommend few bits of bacon and a good handful of frozen corn. My kids devour these!
