When is a cake, not a cake?
When you have to cook that cake for your daughter’s much-anticipated 3rd birthday without most staple cake ingredients, including wheat flour, eggs and milk.
Add to that the fact you can’t use most pre-packaged gluten free flours because they contain corn, which is also off the dietary list. And none of this almond meal business to moisten the results, nuts – of course – aren’t allowed.

It is such a difficult thing to deal with - my sister has lived with allergies and intolerances to many foods for 35+ years and I experienced my mum and dad struggle with (a lack of) choices of foods and the dangers (everywhere you go) that come with having a daughter with anaphylactic food allergies. It is a lot easier now (but no less dangerous) with food choices - there is much more awareness around and a lot of food options. One thing that people do need to be vigilant about is the difference between an ALLERGY and an INTOLERANCE - many people put them in the same basket which is life threatening to people like my sister who can DIE from certain food/additive ALLERGIES.
